Boiled Eggs
Hard boiled - place Egg Innovations eggs in a single layer in a saucepan and
add enough water to at least 1 inch above eggs. Cover and quickly bring just to
boiling. Turn off heat and let eggs set covered for 12-15 minutes. To help
prevent a dark surface on the yolks, immediately run cold water over the eggs
or set on ice.
Soft boiled - let Egg Innovations eggs stand in hot water 4-5 minutes, depending on desired done'ness. Immediately run cold water over the eggs. Steam basted - a lower fat version of fried. Spray pan with vegetable spray. When pan is hot enough to sizzle water, break and slip the eggs into the pan. Immediately reduce heat to low. Cook until the edges turn white about 1 minute. Add 1 teaspoon water for each 2 eggs. Cover pan to hold in steam. Cook until the whites are completely set and the yolks begin to thicken but are not hard.
