Greek Omelette

| 3 Egg Innovations Vegetarian Eggs
1 oz. of milk
1 cup baby fresh spinach
2 oz. Feta cheese

1 Tsp. Virgin olive oil
1/8 Tsp. Salt
1/4 Tsp. Dried oregano
1 clove garlic, minced

| Crack eggs into bowl. Add milk and mix well. Set aside. In a sauté pan, add 1/2 of the oil and heat over high heat. When oil is hot, add onion and sauté on high for 2 minutes. Add spinach, oregano, and sauté for 1 minute. Sprinkle with a dash of salt and remove to a plate. Put remaining oil in pan and heat until it begins to smoke. Add egg mixture and let set about one minute, then flip and add spinach mixture and Feta cheese one half of egg. Fold over and serve garnished with lemon. |
