Italian Omelette

| 3 Egg Innovations Vegetarian Eggs
1 oz. of milk
1 Tbsp. Sundered tomatoes, oil packed
2 oz. fresh mozzarella cheese, diced

1 Tbsp. Fresh basil leaf, chopped
1/8 Tsp. Salt
3/4 Tsp. Virgin olive oil

| Crack eggs into bowl. Add milk and mix well. Set aside. Heat oil in a sauté pan
over high heat until it smokes. Add egg mixture to a pan and mix in salt. Let set
about one minute, then flip over. Place sun-dried tomato, fresh mozzarella and
basil on one half of eggs and cook one more minute. Fold egg over and garnish
with basil. |
