| Crack eggs into a bowl. Add milk, mix well and set aside. In a sauté pan add
1/2 of olive oil over high heat. Add onion and bell pepper and sauté for one
minute over high heat. Add tomato, mushroom, and salt and sauté for an
additional minute. Remove veggies to a plate. Add remaining oil to pan and
heat until it begins to smoke. Add egg mixture and cook one minute. Flip egg
mixture over and place sautéed vegetables on one half. Cook for one more
minute, fold over, place on plate and garnish. |
